The color is true, however the brightness is not. Hubble takes pictures that have massive exposure times, say an hour. Hubble collects photons from whatever object it’s looking at for a whole hour. Eyes don’t work like that, we can’t just collect photons in our eyeballs for an hour and be like “ah yes this is what Hubble sees” because our eyes don’t store photon counts but rather just intercepts them
