After a quick google it seems that the “gingers have no souls” thing was also definitely about the idea that non-christians were barbaric, but that was not exclusive to jewish people. For example it was also about northern Celtic groups, who are still often depicted as having red hair. Modernly, it was revived in a South Park episode.
Yeah like other groups of redheads have been hated on since like, ancient egypt but one of the most “recent” ones other than the whole anti-irish thing is the spanish inquisition targeting redheads because it was thought to be a jewish trait
